Bread and Butter Pudding
Bread and Butter Pudding is an old familiar favourite. As with most recipes of this nature, we've gone ahead and given it a little "real food" makeover.

Ingredients:
- 12 slices of either Sunflower and Raisin Bread or Date and Walnut Bread - toasted and buttered
- 1 tablespoon of orange rind
- 3 eggs
- 1/4 cup organic coconut sugar or organic rapadura sugar
- 1 cup of milk - we choose organic
- 1 cup of cream - we choose organic
- 1 teaspoon vanilla extract
Directions:
Preheat oven to 160 degrees celcius
Butter a 5 - 6cm deep oven dish - one with a 1 litre capacity
Toast and butter slices of bread
Arrange in your prepared dish as pictured above
Scatter with orange rind
Mix eggs, sugar, milk, cream and vanilla and pour over bread
Allow to sit for 15 mins, so that the bread can soak up some of the milk mixture
Sprinkle with a little sugar
Bake for 35 - 40 minutes
Allow to settle for 10 minutes before serving
